December is traditionally game month. A piece of rabbit, duck or pheasant is not only festive, but also local and sustainable if sourced correctly. Combine it with self-foraged fruits or mushrooms for a true survival meal.

Checklist:
✅ Buy or exchange local game
✅ Use everything from the animal
✅ Combine with wild foraging ingredients
✅ Save fat and stock
